Low carb Snickers fudge






1/4 cup butter
3 oz heavy cream
1 tbls sukrin gold or coconut sugar
10 drops caramel stevia or english toffee
2 tbls peanut butter

Put everything in a pot and heat up. Stir every 10 minutes or so. When the fudge starts to thicken it is ready. Note that this low carb fudge does not get as thick as one with white sugar while cold.

Put in peanuts and then put the caramel in a deep dish or bowl and put in the fridge for 2 hours.

Take sugar free chocolate and melt in the microwave and set over the fudge and sprinkle sea salt over. Cut into small pieces and store in fridge.

Avocado coconut pudding


I love avocado and I don't love it. It depence how I am using it. Can't eat it with spoon with nothing else but, avocado fries, guacamole and avocado tzasiki I love to make. Now I have a new favorite. Avocado pudding or ice cream.  It is vegan friendly and sugar free. How great is that!!



Avocado pudding


1/2 pound avocado
1/2 can 7 ounces coconut milk
1/4 cup almond milk
1/4 sukrin/erythiol
5 drops of coconut stevia
pinch of salt
1 tbls lemon juice

Put everything in a blender and blend until smooth. If you want a ice cream put it in the freezer for an hour or until frozen. Sprinkle some shredded coconut on top for garnish.

Strawberry chia ice cream

Strawberry Chia ice cream


Strawberry and chia, chia and strawberry. Sounds good? Sounds really good? Well it tastes even better!! I promise you, this one you should try! One of my favorite things to do and want to hear a secret?? I don't even like strawberries! I know! How odd am I! However this ice cream I love and the taste! Oh my the taste is soooo good. Can you hear how proud I am of this recipe I made ;) And it is really easy to make. The chia seeds make the ice cream crunchy and lovely :)



1 cup fresh or frozen strawberries
1.5 cup heavy cream
3 tbls chia seed
10 tbls water
1/2 cup sukrin melis or another granulated sugar sub.
8 drops of strawberry stevia


First thing you do is to put water and chia seeds in a small bowl and let sit there for about half an hour. Then you take everything and put in a mixer and mix until it is smooth. Put in a box and in the freezer for about 1,5-2 hours. It gets really hard but if you take it out 20-30 mins before serving it will be perfect!

I love chocolate, well who doesn't? What I love even more is when I make it myself and know every bit of ingredient that I put in it. No sugar and still delicious! My younger son loves this and is always asking me, when will we make this again!!?



1/2 cup of coca butter
1/2 cup coconut oil
1/4-1/2 cup cocoa. I prefer Herseys
1/4 cup sukrin melis or another granulated sugar substitute 
almonds
chili
salt

cocoa butter and coconut melt together on low heat. Don't forget to stir. 
Blend with sukrin melis and cocoa in a large bowl. Stir well together. If you like you
can mix in almonds chili and salt. Taste for your self to find your combination.
Keep in refrigerator for an hour at least.
